Vancouver resident Steve Larsen has turned personal adversity into culinary triumph by launching P53 food cart at Troutdale Station. Battling cancer for a second time, Larsen found motivation and a fresh start in the vibrant food scene, opening his cart last week to an encouraging reception.

“When the craving for steak hits, our chili bowl is the answer. For a lighter option, the veggie rice bowl with our house-made sugar-free teriyaki sauce is a hit,” Larsen shared. His venture into the food cart world was sparked by a desire for a new purpose, a lightbulb moment during a challenging time.

P53 is more than just a name; it’s a nod to a dietary approach Larsen adopted during his second cancer battle, which he credits with improving his well-being. Initially diagnosed with stage three colorectal cancer in 2018, the concept of the food cart took root last year after a recurrence in his lungs, despite being in remission since 2019.

“Being diagnosed in remission in 2019 was a relief, and for almost three years, annual tests were clear. However, last January, it reappeared in my lungs, very minimal, but present,” he recounted.

The P53 food cart has become a welcome distraction and a positive focus during his recovery. “I realized that inactivity at home was detrimental,” Larsen explained. His extensive background in the restaurant industry, spanning from cooking and sous chef roles to management positions, equips him well for this new endeavor. “Cooking, sous chef, chef, manager, general manager – I’ve worn many hats,” he stated. The primary adjustment, he notes, is adapting to a more compact kitchen environment. “Every day brings something new to learn. A key lesson? Never run out of rice!”
