Easy Party Foods: Sesame Pancetta Asparagus Sticks

These Asparagus Sticks fall into a category of food I like to call “tidbits and noshy things”—essentially, perfect Easy Party Foods. Everyone needs a few go-to recipes that can instantly elevate a casual cocktail party. Sesame Pancetta Asparagus Sticks have the sophistication to make any gathering feel special. When you’re inviting friends over for drinks and a light bite, you want to avoid the hassle of hiring a caterer, but definitely want to step away from relying on frozen appetizers.

I understand the convenience of those pre-made frozen snacks; some from Trader Joe’s might even taste good. However, since everyone shops at Trader Joe’s, serving them won’t convince anyone that you put any special effort into making your guests feel welcomed and valued.

Of course, the appeal of these frozen “tidbits and noshy things” is their ease of preparation. And yes, ease is important, especially when it comes to party foods.

While I often roll my eyes when cooks overemphasize how “easy” a recipe is, making ease seem like the only selling point (like suggesting cherry Jell-O in chocolate mousse – chocolate mousse is already easy without questionable additions!), I do recognize the value of simplicity.

My usual playful response to overly “easy” claims is, “It’s so easy because you are such a good cook.” It’s a lighthearted jab, delivered with a smile.

So, here I am, about to introduce this elegant recipe for Sesame Pancetta Asparagus Sticks, and I’m starting with: “It’s so easy.”

This isn’t hypocrisy. It’s acknowledging that there’s a time and a place for easy recipes, and parties are definitely one of those times. My personal rule for party food is that it should be ready to eat within 20 minutes or less from the refrigerator. Another crucial aspect of easy party foods is that they should be as effortless to eat as they are to prepare. Bonus points if the recipe can be served at room temperature, doesn’t require a plate, and can be enjoyed with just your fingers. Let’s face it, not many guests can gracefully manage a plate, fork, and cocktail glass simultaneously.

Ingredients

  • ½ cup all-purpose flour
  • 2 large eggs (lightly beaten)
  • ½ cup sesame seeds
  • 12 asparagus spears (trimmed to 5‑inches)
  • 12 slices pancetta
  • 2 cups vegetable oil (or more for frying depending on the size of vessel)
  • coarse sea salt (such as Maldon)
  • 12 bamboo skewers (optional)

Directions

  1. Set up a dredging station: Place the flour, beaten eggs, and sesame seeds in separate shallow bowls that are at least 5 inches in diameter. This makes the coating process for these easy party foods smooth and efficient.
  2. Prepare the asparagus: Wrap each asparagus spear with a slice of pancetta, leaving the tip of the asparagus exposed. This creates a visually appealing and flavorful bite.
  3. Heat the oil: Pour vegetable oil into a medium straight-sided skillet. Heat over medium heat until it reaches 350 degrees F (175 degrees C) on a deep fry or candy thermometer. Maintaining the correct oil temperature is crucial for crispy easy party foods.
  4. Dredge the asparagus: Take a pancetta-wrapped asparagus spear and dredge it in the flour, shaking off any excess. Next, carefully roll the pancetta-wrapped section in the beaten egg, ensuring it’s fully coated. Finally, coat the egg-covered section generously with sesame seeds, pressing lightly to help them adhere.
  5. Fry to golden perfection: Carefully place the dredged asparagus spears into the hot oil, working in batches to avoid overcrowding the skillet and lowering the oil temperature. Fry for about 3 minutes, or until golden brown and crispy.
  6. Drain and season: Remove the fried asparagus sticks from the skillet and place them on a plate lined with paper towels to drain excess oil. Immediately season generously with coarse sea salt while they are still warm.
  7. Optional skewer and serve: If desired, thread the spears from their bottoms lengthwise onto bamboo skewers for easier handling as easy party foods. Serve warm or at room temperature, allowing your guests to enjoy them at their leisure. These are perfect served on their own or with a dipping sauce of your choice.
