Stepping back to 1993, imagine a humble, seasoned spot in Grand Prairie, Texas – the original home of Beto’s Mexican Restaurant and Catering. The name “Beto’s”? It’s a nod to our family, a blend of Humberto (my dad) and Albert (that’s me!). My father, Humberto, had always dreamt of opening a Mexican restaurant, fueled by over thirty years in the industry. One summer day in ’93, he and Mom announced, “We bought a Mexican restaurant!” My initial reaction? Surprise. I was college-bound, ready for university life. But curiosity led me to “OUR” new restaurant. Let’s just say, it was far from glamorous. Think mismatched pink booths and baby blue blinds – a far cry from a trendy foodie destination. “Big Momma’s Country Kitchen,” the previous tenant, had left its indelible mark. Finances were tight, Mom kept her job, my brother Rick was finishing college, and I found myself working tirelessly, questioning my life choices at nineteen. College plans were quickly shelved. But my Dad? He was unwavering. No doubt, no fatigue, just relentless hard work. He understood something I didn’t then: our family recipes, passed down through generations, were our foundation for success. Years flew by, my brother joined the team, and things shifted. Word spread, and our once-unassuming spot started gaining attention for all the right reasons – the food. By 2002, we opened our flagship restaurant, a testament to my Dad’s enduring belief.
