Glenwood Springs has become a culinary hotspot, and on a recent visit, I rediscovered a gem that consistently delivers exceptional food: The Pullman. After a relaxing morning enjoying the Glenwood Hot Springs Pool and Spa of the Rockies, I was ready for a memorable meal, and The Pullman certainly provided just that.
Having visited Glenwood Springs with my family for years, I’ve watched the downtown railroad district blossom into a vibrant dining destination. Recommendations led me to The Pullman, and upon finding it, I was immediately drawn inside. The restaurant’s atmosphere is instantly captivating. The welcoming staff seated me promptly, and I began to soak in the unique ambiance. Each dining area within The Pullman offers a slightly different, eclectic décor, making the space feel both dynamic and intimate. I especially appreciated the open view into the kitchen, a testament to their confidence and transparency.
The interior design masterfully blends industrial and contemporary elements. Exposed brick walls meet heavy wood furnishings, steel beams, and stainless steel accents, all illuminated by bare-bulb lighting. This creates a sophisticated yet comfortable space, enhanced by playful artwork, including pieces with a humorous, slightly subliminal message like “Eat more Pork.” This playful touch reflects the restaurant’s approach to food – serious about quality and flavor, but also fun and approachable. Reviewing the lunch menu, I was impressed by the creative combinations of fresh, locally sourced ingredients in their expertly crafted recipes. The menu is wonderfully diverse, featuring everything from pork and duck to shrimp, steaks, and ham. Whether you’re looking for small plates, substantial entrees, pasta, snacks, sandwiches, or sides, The Pullman’s menu has something to entice every palate, truly showcasing the best of Glenwood Springs Food.

Initially, I was leaning towards a meatier dish, but the daily specials, as described by my waiter David, steered me in a different direction. The roasted Olathe Corn Chowder was highlighted as exceptionally fresh. I decided to try it, and it turned out to be an inspired choice. When the chowder arrived, it was visually stunning – a bowl of culinary art. The soup was incredibly smooth and creamy, bursting with the distinct flavors of fresh, seasonal vegetables, and finished with a subtle hint of spice. It was simply perfect – a standout example of the delicious Glenwood Springs food available at The Pullman.
For my second course, I chose the Handmade Gnocchi Salad from their enticing salad selection. This dish, featuring roasted corn, mushrooms, greens, truffle vinaigrette, and parmesan, was another visual masterpiece. The presentation was impeccable, and the taste even better.
A generous bed of arugula and mixed greens was topped with freshly grated parmesan, concealing a delightful surprise underneath: pan-fried gnocchi with a slight caramelization, tossed with oyster mushrooms and sautéed roasted corn in a truffle vinaigrette. The truffle vinaigrette provided a wonderful kick, harmonizing the flavors of the vegetables and gnocchi beautifully. This salad redefined my expectations for soup and salad combinations. The Pullman has truly spoiled me; I doubt I’ll ever look at a simple soup and salad the same way again. Forget dry, hard croutons – this is elevated dining.
Although David temptingly described the dessert options, a tempting array of sweet flavors and ingredients, I was wonderfully full and satisfied after my soup and salad. David himself was an exceptional waiter – professional, personable, and genuinely humorous. My experience at The Pullman was outstanding, and I am already planning my return for another incredible meal.
