Naturally, upon hearing about their opening in front of Lowes on North Maize Road, a visit was immediately in order.

They operate from Wednesday to Saturday, 11 am to 9 pm, and on Sunday from 11 am to 7 pm. Do note that they are closed on Mondays and Tuesdays, so plan your visit accordingly!

For my initial visit, I opted for a selection to sample a variety of their offerings. My order included a refreshing ceviche tostada, a flavorful shrimp taco, a classic al pastor taco, and an adventurous tripa taco.

Let’s talk about the highlights, and for me, the shrimp taco was the star of the show. The creamy, mayo-based sauce was incredibly flavorful, but the real genius was in the preparation of the shrimp. By dicing the shrimp into smaller pieces, Primos ensures a perfect shrimp-to-other-ingredients ratio in every single bite. Too often, shrimp tacos suffer from large shrimp pieces that tend to fall out, disrupting the flavor balance. This thoughtful detail truly elevates the shrimp taco experience – sometimes, it really is the little things that make a big difference.
The al pastor and tripa tacos also held their own. The al pastor was expertly seasoned, achieving a delightful balance of sweet and savory, while the tripa tacos boasted a pleasant grilled texture that added a satisfying crunch.
My only minor critique was directed towards the ceviche tostada. The proportion of fish felt somewhat lacking compared to the generous amounts of tomatoes, onions, and cucumbers. The dominant flavors were overwhelmingly onion and cucumber, overshadowing the fish itself.
Despite the minor imbalance in the tostada, the tacos were undeniably fantastic and absolutely warrant a return visit. If you find yourself in Northwest Wichita, especially during weekend shopping trips, Primos Mexican Food Truck is a must-try, particularly if you’re a fan of authentic taco truck fare.
